Jalapeno-Glazed Country
Style Pork Ribs

4 lbs Country Style Pork
Ribs
Garlic Salt
1 Onion
1 bottle BBQ Sauce --
Whatever is on sale
1/2 cup Jalapeno Jelly
Pre-Heat oven to 375 degrees.
Sprinkle all sides of Ribs with Garlic Salt -- very liberally.
Position Ribs in a 9x13 pan.
Cut onion into thick slices, lay them on top of the ribs.
Cover pan tightly with foil.
Cook for 1 hour.
Heat
1/2 cup jelly in sauce pan. Heat until jelly melts, add BBQ sauce and
stir until well mixed. Set
aside. (If I can't find the jelly, I just use the BBQ sauce).
After
one hour of baking, pull pan out of oven, remove onion and throw it away.
Drain drippings out of pan. Turn ribs over if you have time. Slather ribs
with sauce. Cover pan with foil
again, and return pan to oven. Decrease heat to 350 degrees. Cook for one
more hour.
At
end of hour, turn ribs over again in pan ( if you have time), slather
with any remaining BBQ sauce and/or drippings.
At this
point you have two choices, you can serve ribs immediately, or you can cover
pan with foil again, and return pan to oven.
Allow oven to return to 350 degrees and then turn oven
off.
I have left the ribs in the oven for anywhere from 30 minutes to 3
hours. They will become more and
more tender. They reheat nicely
and leftovers microwave well.
